Sergio and Rosaleta from
Carrasco are visiting Australia at the moment. With the perfect weather it was a great opportunity to show them some of our beach culture with a weekend at Byron. Sergio cooked up a few Spanish dishes from his home town of Cordova that are worth sharing.
We bought many of the ingredients at the fantastic Bangalow markets.

Chopped Palleta and hard boiled eggs for the sauce garnish. |

Wisk the eggs into a batter, to which the cooked potato is added and seasoned with Sal Tradicional . |

The mixture is then returned to the pan and cooked on both sides. |
